“I’m a terrible cook! 🙁 When I’m alone with the kids I just whip up a green smoothie with some oats or something else filling (as in bananas, mint, oats and honey, for example). When hubby is home, a fast favorite for them is yams mashed with butter and scrambled eggs (a variety of yams we have here that are not sweet). I prefer them with cheese though.”

“I echo Polish Mom Photographer about using a crock pot. As a working mom – it’s a HUGE time-saver for me. I set it when I leave for work in the morning, and whatever I put in there is ready when I get home from work.
I use it a lot to cook beans. Since we eat beans at least three times a week, I avoid canned ones (due to BPA). I cook the beans in the crock pot, make a little sofrito (garlic, onions, peppers, tomato, cumin, salt, pepper, sautéed in olive oil) when I get home from work, mix it with the beans, and dinner is ready!”

Moosewood’s Baked Pasta with Cauliflower. It’s gourmet mac n’ cheese with veggies – and my kids love it. Not quick, but even the half recipe makes enough for two meals.
BAKED PASTA WITH CAULIFLOWER AND CHEESE
Bechamel Sauce
1/2 c butter
1/2 c flour
1 quart milk, heated
1 1/2 T Dijon mustard
pinch fresh nutmeg
salk and pepper to taste
Casserole
1/4 c vegetable oil
4 c chopped onions
3 garlic cloves, minced
1/2 c fresh basil, chopped
1 large head cauliflower, cut into florets
6 ripe tomatoes, cbopped (or 3 c canned, drained and chopped)
3 T fresh lemon juice
1 lb medium pasta shells
1 c freshly grated Parmesan cheese
1 1/2 c shredded mozzarella or mild provolone cheese
seasoned bread crumbs
To prepare Bechamel sauce, melt butter in heavy sauce pan. Whisk in the flour until a smooth paste is formed. Add the heated milk slowly, whisking until the sauce begins to thicken. Add the mustard, nutmeg, salt, and pepper and let the sauce thicken further on low heat. Remove from heat and cover.
Saute the onions, garlic, and basil in oil. When onions are translucent, add the cauliflower and saute for 5 minutes more. Add the tomatoes and simmer until the cauliflower is tender.
Cook the pasta al dente and drain.
in a large bowl, combine the cooked pasta, the sauteed vegetables, and the lemon juice. Mix in the Bechamel sauce. Put half of the pasta mixture in an oiled baking dish. Sprinkle on half of each of the cheeses. Add the rest of the pasta mixture and then the rest of the cheeses. Top with bread crumbs. Bake covered at 375 for 30 minutes and then uncovered for about 15 minutes, or until bubbling and golden on top.
Will have to try this Human Rights Warrior. I made homemade mac & cheese, but run mushrooms through the food processor, throw some spinach in the pasta water right before the pasta is ready, and some protein – shredded salmon or chicken – for a dinner in a bowl. Never thought about cauliflower!
Also love the crockpot and rely on quiche or frittata for quick & easy. Grilled cheese sandwiches are a hit. Bi bim bop is another go-to in our house. A little prep heavy but can be done in stages ahead of time.
So true – grilled cheese or cheese quesadillas (and I always try to sneak a little protein, like a slice of turkey in) are a quick hit!
